  1. I occasionally cooked during High School, however, college was my first real experience cooking on
  2. a daily basis. Since I have lived to tell the tail, I want to share some of the recipes that
  3. I created which got me through my first two years of college.
  4. # Level 1: Cooking in the Dorms
  5. Being stuck in a dorm room you are limited to only being able to use the microwave.
  6. Desperate times calls for desperate solutions.
  7. ## Ramen Pizza
  8. This recipe surprised me as to how it turned out.
  9. You start making this by microwaving the ramen noodles for about a third of the instructed time in a normal bowl of water.
  10. When you place the noodles in the bowl, make sure to not break them apart.
  11. Quickly take the romen noodles out of the bowl, dry, and place on a plate to prevent overcooking.
  12. Next you slather the ramen noodles with your desired pizza toppings and place in the microwave for around 2 minutes.
  13. ### Ingredients
  14. - Ramen noodle packet
  15. - Pasta or pizza sauce
  16. - Cheese - preferable shredded mozzarella
  17. - Peperoni or any pizza topping you can get
  18. ## Omelet In a Mug
  19. Life hack: you can cook scrambled eggs in a coffee mug in the microwave.
  20. The resulting eggs are abnormally fluffy and taste a little strange, but, it makes for a quick dinner.
  21. It just so happens that you can also cook hot dogs in the microwave.
  22. When I stumbled upon this recipe and clung to it since it was fast, cheep,
  23. and most of the dinning places on campus were closed by the time I got out of work.
  24. To make this you crack and mix two eggs in a coffee cup.
  25. You then microwave the coffee mug, mixing the eggs every 30 seconds.
  26. Half way through cooking the eggs, you add a diced hotdog and some shredded cheese.
  27. Once your eggs have all cooked, you can add a healthy dosage of salsa.
  28. Voila, you have an omelet which can compete with whatever they are serving at the dinning hall.
  29. ## Ingredients

  31. - 1 Hotdog
  32. - Cheese
  33. - Salsa
  34. # Level 2 Cooking with no Time
  35. Once you get an apartment you can advance from cooking in a microwave in the dorms.
  36. Being a college student, time is very scarce I found the following recipes to be very fast and easy.
  37. These recipes are also very forgiving in the sense that you can change the directions and ingredients and still end up with something really good.
  38. ## Chili
  39. It is *very* hard to make a bad chili.
  40. All you essentially have to do is gather/prep all the ingredients and plop them in a crock pot and cook for 6-8 hours on low.
  41. You don't have to cook this in a crock pop, however, it takes more time to prepare on the stove since you have to monitor it while it cooks.
  42. I usually saute the onions while I cook the ground beef so that it cooks in the grease of the beef.
  43. The average prep time for this recipe is around 20-30 minutes.
  44. However, if you made this vegetarian you can cut the prep time down to a mere 10 minutes.
  45. ### Ingredients
  46. **Recommended**
  47. - 1 sauteed sweet onion
  48. - 1/4-1/2 lbs browned ground beef
  49. - 2-3 cans of beans: I usually use chili and baked beans
  50. - 1 can of diced tomatoes
  51. **Optional**
  52. - 1 can of corn
  53. - 1 pepper
  54. - Minced Garlic
  55. - Mustard
  56. - Ketchup
  57. - Chili Powder: to taste
  58. - Pepper Flakes
  59. - Brown Sugar
  60. ## Poor Mans Chicken Parmesan
  61. I call this poor mans chicken parmesan only because it uses chicken patties, this actually tastes really good.
  62. To prepare this you slather chicken patties with pasta sauce and cheese and then cook normally in the oven.
  63. While the chicken patties cook, you can cook your pasta noodles and sauce.
  64. You serve the pasta noodles with the sauce topped with the cheesy chicken pattie.
  65. ### Ingredients
  66. - Chicken Patties
  67. - Pasta Sauce
  68. - Pasta Noodles
  69. - Cheddar Cheese
  70. ## Soup
  71. This is a easy recipe which has *so* many combinations.
  72. I usually make some form of a chicken soup, the rest of the ingredients are entirely dependent on what I have in the kitchen.
  73. You will have to play around with the ingredients to find the perfect combination, however, I have not found a combination which did not work with me.
  74. Similar to chili, you just put all the ingredients in a crock pot and let cook on low for 6-8 hours.
  75. From experience, I would recommend putting in spices like garlic and basil during the last hour of cooking to keep their flavors sharp.
  76. ### Ingredients
  77. - Bag of Frozen Chicken Strips
  78. - 3-4 Diced Potatoes
  79. - Chicken Stock
  80. **Whatever of these you have**
  81. - 3 Diced Carrots
  82. - 1-2 Diced Onions
  83. - 1 can Diced Tomatoes
  84. - Can of Tomato Soup
  85. - 1 Can corn
  86. - Diced Pepper
  87. - 3 Stalks of Celery
  88. - Mushrooms
  89. - Minced Garlic
  90. - Basil
  91. - Salt
  92. - Pepper
  93. - Brown Sugar
  94. ## Potato Casserole
  95. For this recipe you cut all the vegetables and place them in a large baking pan with the chicken.
  96. If you want, you can also mix in some seasonings like salt, garlic, pepper, and basil.
  97. Then you then mix everything together with some canola oil.
  98. Cook this casserole in a 350 degrease oven for around 30 minutes.
  99. Briefly take this out of the oven and top with cheese and ranch dressing and place back in oven for another 10-15 minutes.
  100. If you are really cheap, you can make this with hot dogs rather than pre-cooked chicken strips.
  101. ### Ingredients
  102. - 4-6 Peeled and Cubed Tomatoes
  103. - 1-2 Diced Onions
  104. - Bag of Chicken Strips
  105. - Minced Garlic
  106. - Chopped Carrots
  107. - Canola or Vegetable Oil
  108. - Ranch
  109. - Sour Cream
  110. - Cheeses
  111. # Level 3 Cooking
  112. Once you master the art of sauteing onions and making soups, you are ready to advance to level three.
  113. Nothing I will present is incredibly difficult, but, there is more room for mistakes.
  114. ## Fried Rice
  115. The challenging part of this recipe is getting the correct timing if you are short on time.
  116. To finish this dish in 40 minutes, you want to cook 2 cups of rice, brown ground beef with onions and cook 3 scrambled eggs all simultaneously.
  117. You then combine all these ingredients in a large fry pan with vegetables, worshire, and soy sauce.
  118. If you want to prevent the dish from turning out sticky, you should use left over rice.
  119. Or, cook the rice first and then let if cool in the fridge for a few hours.
  120. ### Ingredients
  121. - 1-2 Cups of Rice
  122. - 1/2 lbs of Ground Beef
  123. - 1 Onion
  124. - Broccoli or Peas
  125. - Soy Sauce
  126. - Worshire Sauce
  127. ## Chicken
  128. Cooking raw chicken is definitely not on the agenda for most college students.
  129. When cooking the chicken I would recommend using a meat thermometer to make sure that the chicken reaches 165 degrease.
  130. Either buy chicken breasts or cut a whole chicken and save the spine and wings for a chicken stock.
  131. On a baking pan lather the chicken in the marinara sauce that you just mixed (ingredients below) and sprinkle some salt and pepper on the chicken.
  132. Let the chicken cook for around 30 minutes in a oven that is 400 degrease (until the chicken reaches 165).
  133. After the chicken comes out of the oven sear it on a ripping hot skillet with some more of the marinara sauce.
  134. Cooking the chicken this way will keep the chicken juicy and the skin crispy.
  135. ### Marinara Sauce Ingredients
  136. - 4 TBSP oil
  137. - 3 TBSP Honey
  138. - Minced Garlic
  139. - 2 TBSP lemon juice
  140. - 1/2 TSP Paprika
  141. ## Chicken Stock
  142. If you happen to use a full chicken and end up with some bones you are in the perfect position to make chicken stock.
  143. Essentially all you need to do is put your chicken bones, onions, carrots, basil, and water in a crock pot for 8-12 hours.
  144. Periodically you should skim off the fat that surfaces to the top.
  145. At the end of the 12 hours you use a fine mesh skimmer to filter out all the chicken and vegetables.
  146. If you want a darker flavor to the stock, roast the chicken parts and vegetables in the oven to start to brown them.
  147. ### Ingredients
  148. - Chicken Bones
  149. - 1-2 Quartered onions
  150. - 2-3 Carrots
  151. **Optional**
  152. - Celery
  153. - 1 TBSP Soy Sauce
  154. - Basil
  155. ## Home Made Pizza
  156. I don't think this requires any explanation.
  157. Make pizza dough (with a bread maker if you are lazy), add sauce, throw in oven.
  158. ## Chicken and Rice
  159. My version of chicken and rice may not be orthodox.
  160. This recipe came into existence because I needed something which had ingredients which overlapped with with the ingredients of the other things I was cooking that week.
  161. Essentially, you make rice and put a thick red sauce with chicken, onions, corn, peppers over it.
  162. You prepare the rice like normal.
  163. In a large sauce pan you saute onions and peppers.
  164. Once the onions start to turn brown, you add 1 can of diced tomatoes, 1 can of corn, minced garlic, basil, brown sugar, frozen chicken strips and mustard.
  165. Once the chicken has thawed, you are ready to serve this dish.
  166. ### Ingredients
  167. - 2 Cups Rice
  168. - Bag of Grilled Chicken Strips
  169. - 1-2 Onions
  170. - 1-2 Peppers
  171. - 1 Can Diced Tomatoes
  172. - 1 Jar Pasta Sauce
  173. - 1 Can Corn
  174. - Minced Garlic
  175. - Brown Sugar
  176. - Basil
