  1. I occasionally cooked during High School, however, college was my
  2. first real experience cooking on a daily basis. Since I have lived to
  3. tell the tail, I want to share some of the recipes that I
  4. created/modified which got me through my first two years of college.
  5. # Level 1: Cooking in the Dorms
  6. Being stuck in a dorm room you are limited to only being able to use
  7. the microwave. Desperate times calls for depraved cooking solutions.
  8. ## Ramen Pizza

  10. This recipe surprised me as to how it turned out. You start making
  11. this by microwaving ramen noodles for about a third of the instructed
  12. time in a bowl of water. When you place the noodles in the bowl, make
  13. sure to not break them apart. After cooking, take the romen noodles
  14. out of the bowl, dry, and place on a plate. Next, you slather the
  15. ramen noodles with your desired pizza toppings and place in the
  16. microwave for around 2 minutes.

  22. ## Omelet In a Mug

  24. Life hack: you can cook scrambled eggs in a microwave using a coffee
  25. mug. The resulting eggs are abnormally fluffy and taste a little
  26. strange, but, it makes for a quick meal. It just so happens that you
  27. can also cook hot dogs in the microwave.
  28. When I stumbled upon this recipe, I clung to it since it was fast,
  29. cheep, and most of the dinning places on campus were closed by the
  30. time I got out of work. To make this, you crack and mix two eggs in a
  31. coffee cup. You then microwave the coffee mug, mixing the eggs every
  32. 30 seconds. Half way through cooking the eggs, you add a diced hotdog
  33. and some shredded cheese. Once your eggs have all cooked, you can add
  34. a healthy dosage of salsa. Voila, you have an omelet which can compete
  35. with whatever they are serving at the dinning hall.

  41. # Level 2: Cooking With no Time
  42. Time is *very* scarce as a college student, I found the following
  43. recipes to be fast and easy. These recipes are very forgiving in the
  44. sense that you can change the directions and ingredients and still end
  45. up with something resembling food.
  46. ## Chili

  48. It is *very* hard to make a bad chili. All you essentially have to do
  49. is gather/prep all the ingredients and plop them in a crock pot and
  50. cook for 6-8 hours on low. You don't have to cook this in a crock pop,
  51. however, it takes more time to prepare on the stove since you have to
  52. monitor it while it cooks for an hour on medium heat. I usually saute
  53. the onions while I cook the ground beef so that it cooks in the grease
  54. of the beef. The average prep time for this recipe is around 20-30
  55. minutes. However, if you made this vegetarian you can probably cut
  56. the prep time down to a mere 10 minutes.

  60. - 1/4-1/2 lbs Browned Ground Beef
  61. - 2-3 Cans of Beans (Chili and Baked Beans go Well Together)

  66. - Minced Garlic
  67. - Mustard
  68. - Ketchup
  69. - Chili Powder
  70. - Pepper Flakes

  72. ## Poor Man's Chicken Parmesan

  74. I call this poor man's chicken parmesan only because it uses chicken
  75. patties, this actually tastes really good. To prepare this you slather
  76. chicken patties with pasta sauce and cheese and then cook normally in
  77. the oven. While the chicken patties bake, you can cook your normal
  78. pasta noodles and sauce. You serve the pasta noodles with the sauce
  79. topped with the cheesy chicken pattie.

  85. ## Soup

  87. This is an easy recipe which has *so* many combinations. I usually
  88. make some form of chicken soup, the rest of the ingredients are
  89. entirely dependent on what I have in the kitchen. You will have to
  90. play around with my recommenced ingredient list to find the perfect
  91. combination for you, however, I have not found a combination which did
  92. not work with me-- yet. Similar to chili, you just put all the
  93. ingredients in a crock pot and let simmer on low for 6-8 hours. I
  94. would recommend putting in spices like garlic and basil during the
  95. last hour of cooking to keep their flavors sharp. You want to add the
  96. salt and pepper to the soup in the beginning.

  100. - 3-4 Diced Potatoes
  101. - Chicken Stock

  105. - Can of Diced Tomatoes
  106. - Can of Tomato Soup
  107. - Can of Corn
  108. - Diced Peppers
  109. - Stalks of Celery
  110. - Mushrooms
  111. - Minced Garlic
  112. - Basil
  113. - Salt
  114. - Pepper
  115. - Brown Sugar
  116. ## Potato Casserole

  118. For this recipe you cut all the vegetables and place them in a large
  119. baking pan with the chicken strips. If you want, you can also mix in
  120. some seasonings like salt, garlic, pepper, and basil. You then then
  121. mix everything together with some canola or vegetable oil. Cook this
  122. casserole in a 350 degrease oven for around 30 minutes. Briefly take
  123. this out of the oven and top with cheese and ranch dressing and place
  124. back in oven for another 10-15 minutes. If you are really cheap, you
  125. can make this with hot dogs rather than pre-cooked chicken strips.

  129. - Bag of Chicken Strips
  130. - Minced Garlic
  131. - Chopped Carrots
  132. - Canola or Vegetable Oil
  133. - Ranch Dressing
  134. - Sour Cream
  135. - Cheeses
  136. # Level 3 Cooking
  137. Once you master the art of sauteing onions and making soups, you are
  138. ready to advance to level three. Nothing I will present is incredibly
  139. difficult, but, there is more room for mistakes and takes longer to
  140. prepare.
  141. ## Fried Rice

  143. The challenging part of this recipe is getting the correct timing. To
  144. finish this dish in 40 minutes, you want to cook 2 cups of rice, brown
  145. ground beef with onions and cook 3 scrambled eggs all simultaneously.
  146. You then combine all these ingredients in a large fry pan with
  147. vegetables and soy sauce. If you want to prevent the dish from turning
  148. out sticky, you should use left over rice. Or, cook the rice first
  149. and then let if cool in the fridge for a few hours.

  153. - 1 Onion
  154. - Broccoli or Peas
  155. - Soy Sauce

  158. Cooking raw chicken is definitely not on the syllabus for most college
  159. students. When cooking the chicken I would strongly recommend using a
  160. meat thermometer to make sure that the chicken reaches 165 degrease.
  161. Either buy chicken breasts or cut a whole chicken-- use the left over
  162. chicken spine and wings for chicken stock. On a baking pan lather the
  163. chicken in the marinara sauce that you just mixed (ingredients below)
  164. and sprinkle some salt and pepper on the chicken. Let the chicken cook
  165. for around 30 minutes in a oven that is 400 degrease (until the
  166. chicken reaches 165). After the chicken comes out of the oven, sear it
  167. on a ripping hot skillet with some more of the marinara sauce. Cooking
  168. the chicken this way will keep the chicken juicy and the skin crispy.

  171. - 4 TBSP Oil
  172. - 3 TBSP Honey
  173. - Minced Garlic
  174. - 2 TBSP Lemon Juice

  176. ## Chicken Stock

  178. If you happen to cook with a whole chicken and end up with some
  179. chicken bones, you are in the perfect position to make chicken stock.
  180. Essentially all you need to do is put your chicken bones, onions,
  181. carrots, and basil in a crock pot cook for 8-12 hours on low.
  182. Periodically you should skim off the fat that surfaces to the top. At
  183. the end of the 12 hours you use a fine mesh skimmer to filter out all
  184. the chicken and vegetables. If you want a darker flavor to the stock,
  185. roast the chicken parts and vegetables in the oven before adding them
  186. to the crock pot.

  199. My version of chicken and rice may not be orthodox. This recipe came
  200. into existence because I needed something to make which shared
  201. ingredients with the other dishes that I frequently make.
  202. Essentially, you make rice and put a thick red sauce with chicken,
  203. onions, peppers over it. You prepare the rice like normal. In a large
  204. sauce pan you saute onions and peppers. Once the onions start to
  205. brown, you add diced tomatoes, corn, minced garlic, basil, brown
  206. sugar, frozen chicken strips and mustard. Once the chicken has thawed,
  207. you are ready to serve this dish.

  211. - 1-2 Onions
  212. - 1-2 Peppers
  213. - 1 Can Diced Tomatoes
  214. - 1 Jar Pasta Sauce
  215. - 1 Can Corn
  216. - Minced Garlic
  217. - Brown Sugar
  218. - Basil
